Hot Sandwiches

I am somewhat old fashioned and although my husband is not picky, I like to make hearty and hot dinners. To me it is a little more formal and makes mealtime more meaningful than a sandwich on a cold plate. Recently, I have simply started making hot sandwiches. They are absolutely yummy and somewhat of a comfort food. Almost any sandwich that can be made cold can also be made hot. Another bonus-sandwiches are cheap to make and fill you up with a lot less $ than serving a full course meal. Plus-sandwiches are a balanced food complete with grains and proteins--especially if whole wheat bread is used.

Here are some of my favorites...

Hot Chicken Sandwich
This is a perfect comfort food and will accompany the chilly autumn days beautifully.
For a serving of 2-3

2 chicken legs and thighs
4-5 slices of toast
salt and pepper
cornstarch

1. Simmer chicken in a pot with water covering for about 3-4 hours
2. Cut up the chicken into pieces and set the pieces aside-but throw the bones back into the pot and simmer another couple hours
3. Strain the bones out of the broth and chill it until the fat hardens on top
4. Pick off the fat from the broth and toss it
5. Reheat the broth and toss in the chopped chicken pieces
6. Mix about 2 T of cornstarch in 1/2 c. warm water until completely dissolved
7. Slowly add cornstarch mixture into broth and boil until thickened
8. Pour chicken broth over slices of toast and eat

Note: This can be done with any kind of poultry--it is a great use for leftover turkey from Thanksgiving

Hot Roast Beef Sandwiches
Have some leftover roast beef from Sunday Dinner? We actually had these last night for dinner-yummy.

Bread
Leftover Roast
Leftover onions from the roast (optional)
Leftover mashed potatoes (optional)
Cheese (optional)
Mayonnaise

1. Turn oven on broil and move oven rack to the highest position
2. Place desired amount of bread on a cookie sheet and place on top rack
3. Toast bread until golden on one side
4. Flip bread over and spread each slice with thick coating of mayonnaise
5. Lay shredded roast beef on half of the slices
6. If desired layer with onion, cheese, or/and mashed potatoes
7. Put the cookie sheet back into the oven and toast until the cheese melts and the mayonnaise bubbles a bit
8. Top the sandwiches with the other halves of bread and enjoy

Hot Egg Sandwiches
This is actually my husband's favorite way to eat eggs--I must admit it is yummy

Bread
Eggs
Salt and Pepper
butter or margarine
Mayonnaise

1. In a glass measuring cup, mix 2 eggs with a bit of salt and pepper
2. Fry the eggs on high heat until mixture starts to show it is cooking around the edges
3. Flip and cook completely on the other side (almost like cooking an omelet)
4. Spread mayonnaise on two slices of bread
5. Place cooked eggs on the bread and top with the remaining slice of bread
6. Eat
