Mayonnaise in My Pantry

If you are like me, you are a home-maker who has yet to discover the powers of mayonnaise. The more I learn about it, the more I am falling in love with the product. Before my readers call me a nutcase, let me explain...

Mayonnaise is basically a French sauce made from the emulsion of egg, oil, and vinegar. We normally think of using it on sandwiches or in salads, but that is as far as we have dared take it. Recently, I have discovered its power in baked goods. I happened upon it when I was having company over and needed to bake a dessert. It was then that I realized I had no eggs, butter, or milk. It is difficult to come up with things to make when one is out of those essential ingredients. So, I went to my trusty recipe website (http://allrecipes.com/) and typed in cookies-with no milk, egg, or butter. One of the suggestions was mayonnaise cookies. I tried them--they were a huge success. Not only did they end up tasting like my Great Aunt's famous Snicker doodle cookies, but they had little to not fat because there was no butter or added oil-other than what was in the mayonnaise! Incredible! Since mayonnaise has eggs and oil and vinegar, it is like adding all those ingredients into your recipe in one scoop.  Definitely a product worth keeping on hand and experimenting with more.


Mayonnaise Cookies Recipe

Mayonnaise Cookies

"A rich, crisp, sugar type cookie that is easy to make. The mayonnaise takes the place of the shortening and eggs. My son says it is possibly the world's best cookie."


Ingredients

  • 1 cup white sugar
  • 2 cups all-purpose flour
  • 1 cup mayonnaise
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  1. Mix together sugar, flour, baking soda, and salt. Add mayonnaise and vanilla. Mix together very well.
  2. Shape into walnut sized balls. (The dough will be crumbly). Mash with a fork, sprinkle with sugar. Bake 12 minutes in a 350 degree F (175 degrees C) oven.

I used cinnamon sugar on top and only cooked them for 10 minutes.
Now another recipe I love is my mother's recipe for a crock-pot chocolate cake. In fact it is both my husband and my favorite chocolate cake. I believe the mayonnaise makes it extra moist, and it is not overly sweet like some cakes tend to be. It is in my estimation-just perfect.



Crock Pot Chocolate Cake

2 C. Flour
1 t. Baking Soda
1/2 c. Sugar
1/4 t. Salt
6 T. Coco
1 egg
1 c. mayonnaise
1 c. hot water-not boiling yet
1 t. vanilla

1. Mix ingredients together
2. Pour into a greased and floured cake pan that fits evenly into a crock pot
3. Bake in crock pot on high-uncovered-for about 3 hours until center is no longer gooey
4. Cool and frost with any frosting if desired
